Flavorful Franks And Rice

Whip up this delicious dish to put all your taste buds to work.

Prep Time: 15 minutes
Bake Time: 10 minutes
Makes: 4 servings (about 1-1/4 cups each)

Ingredients:

4    Ball Park® Franks
2 tablespoons oil
½cup chopped onion
2 jalapeño peppers, seeded & chopped
2 cups cooked rice
¼cup chopped cilantro
2 tablespoons fresh lime juice
½teaspoon ground cumin
¼teaspoon hot pepper sauce
1 ripe avocado, peeled & chopped
1 tomato, seeded & chopped
4 flour tortillas, warmed (optional)

Directions:

  1. Slice franks into ¼” slices.
  2. Heat oil in a large skillet over medium heat for 2 minutes. Add franks, onion and jalapeno peppers; cook and stir 4-5 minutes or until franks are hot and vegetables are tender.
  3. Stir in rice, cilantro, lime juice, cumin and hot pepper sauce; heat through. Top each serving with chopped avocado and tomato or serve in warm tortillas, if desired.
