Makes: 4 servings (about 1-1/4 cups each)

| 4 | Ball Park® Franks |
| 2 | tablespoons oil |
| ½ | cup chopped onion |
| 2 | jalapeño peppers, seeded & chopped |
| 2 | cups cooked rice |
| ¼ | cup chopped cilantro |
| 2 | tablespoons fresh lime juice |
| ½ | teaspoon ground cumin |
| ¼ | teaspoon hot pepper sauce |
| 1 | ripe avocado, peeled & chopped |
| 1 | tomato, seeded & chopped |
| 4 | flour tortillas, warmed (optional) |
Directions:
- Slice franks into ¼” slices.
- Heat oil in a large skillet over medium heat for 2 minutes. Add franks, onion and jalapeno peppers; cook and stir 4-5 minutes or until franks are hot and vegetables are tender.
- Stir in rice, cilantro, lime juice, cumin and hot pepper sauce; heat through. Top each serving with chopped avocado and tomato or serve in warm tortillas, if desired.
